Maple-Mustard Chicken

Ingredients
- chicken thighs/chicken breasts
 
- maple syrup
 
- whole grain mustard
 
- applewood smoke spice
 
- russet potato
 
- carrot
 
- zucchini
 
 
Directions
- Preheat oven to 450
 
- Peel and cut potatoes into 1/2 inch pieces
 
- Large Pot: Add potatoes, salt, and enough water to cover
 
- Boil potatoes for 8-10 minutes
 
- Drain and return potatoes to the pot
 
- Add 3 tbsp milk, 2 tbsp butter, and mash potatoes until creamy, season with pepper
 
- Peel and cut carrots into 1/4 inch rounds
 
- Cut zucchini into 1/2 inch rounds
 
- Set aside half the maple-mustard mixture
 
- Season chicken with Applewood Smoke Spice
 
- Cook chicken in pan with oil for 1-2 min
 
- To baking sheet add chicken on one half with maple mustard mixture on it, and zucchini on other half
 
- Roast chicken and zucchini for 8-10 mins until chicken is cooked through
 
- Season with salt and pepper
 
- Combine and eat
