Maple Mustard Pork Chops

Ingredients

  • pork chops, boneless/chicken breasts
  • maple syrup
  • whole grain mustard
  • baby spinach
  • gala apple
  • yellow potato
  • white wine vinegar
  • soy sauce

Directions

  1. Preheat oven to 450 F
  2. Cut potatoes into 1/2 inch pieces
  3. To parchment-lined baking sheet, add potatoes and 1 tbsp oil, cook for 24-28 minutes in middle of oven
  4. In large non-stick pan, heat 1 tbsp oil, and fry pork chops for 2-3 mins per side
  5. In small bowl, add maple syrup, mustard, vinegar. Season with salt and pepper
  6. Transfer 1 tbsp maple mustard mixture to a large bowl
  7. Add to pork chops mixture maple-mustard mixture, soy sauce, and 1/2 cup water
  8. Reduce heat and fry for 5-6 minutes until pork chops are cooked through
  9. Cut apple into 1/2 inch slices and remove core
  10. Whisk 1/2 tbsp oil into reserved maple-mustard mixture
  11. Add spinach and apples, season with salt and pepper
  12. Serve meal
