Quick Tortilla Crusted Chicken

Ingredients
- chicken breast tenders
 
- mayonnaise
 
- carrot, julienned
 
- lime
 
- spring mix
 
- chipotle sauce
 
- tortilla chips
 
- seed blend
 
- chili cumin spice blend
 
 
Directions
- Preheat oven to 450 F
 
- Crush chips to a coarse grain
 
- To a medium bowl, add chicken, chili-cumin spice blend, salt and pepper, and then mayo
 
- Transfer chicken to crushed tortilla chips and coat
 
- Add chicken to baking-sheet and add 2 tsp of oil over top
 
- Cook in middle oven rack for 12-15 minutes
 
- To a large bowl, add 1tbsp lime juice, 1 tsp sugar, 1 tbsp mayo, 2 tbsp oil.
 
- Add spring mix and carrots, then toss to coat
 
- Combine chipotle sauce, remaining mayo, and water. This is the sauce. Serve meal when complete.
